Happy Cinco De Mayo friends!
Since I forgot to post something for Gluten-Free Friday, I decided to make it up and post a G-free Cinco De Mayo Recipe. This is one I have not tried yet, but sounds yummy! If anyone tries it please let me know how it went and tasted! This one does contain dairy products. I would suggest substituting whole Lactaid milk or canned coconut cream if you can find it (usually in the ethnic foods aisle. Goya or Thai Kitchen both have them). And, I always recommend Daiya cheese for an alternative, because it melts the best. Enjoy!
