So this Friday I wanted to share with you a great gluten free product that I am totally in love with.
I just started buying Skinnygirl Tasty Nutrition Bars. They are gluten-free snack bars that are 170 calories, 6 grams of protein, and 5 grams of fiber. The other great thing about them is that they are low in fat with only 7 grams! Another perk is they are free of artificial sweeteners and flavorings. Again, these bars are gluten-free, however they are not dairy-free and also contain nuts, so for those with multiple food allergies, just be advised.
The taste is to die for! I have tried both the chocolate peanut butter with sea salt, and the banana oatmeal dark chocolate. I have had them at breakfast, as a snack, and even as dessert! The chocolate peanut butter is like a delicious and satisfying cross between a Reese’s cup and a Snicker, while the banana oatmeal is crunchy yet creamy and will remind you of fresh baked banana bread. There is also a third flavor, dark-chocolate multi-grain pretzel, which is also gluten-free and which I am so excited to try!
They are a bit expensive, being about $6.0o for 5 bars. You can find them at target and GNC, or online at skinnygirldaily.com. Let me tell you though, they are totally worth it! The are the first gluten-free protein bars that are tasty and are not bulked up with a lot of calories and fat.

Since I forgot to post something for Gluten-Free Friday, I decided to make it up and post a G-free Cinco De Mayo Recipe. This is one I have not tried yet, but sounds yummy! If anyone tries it please let me know how it went and tasted! This one does contain dairy products. I would suggest substituting whole Lactaid milk or canned coconut cream if you can find it (usually in the ethnic foods aisle. Goya or Thai Kitchen both have them). And, I always recommend Daiya cheese for an alternative, because it melts the best. Enjoy!
Southewestern Shepherd’s Pie
So I wanted to switch it up and give you a savory recipe this week. This is a recipe that I have adapted to make work for the gluten-free and dairy-free. It is another recipe that almost all my friends find delicious without ever knowing it is gluten-free and dairy-free. It’s an easy recipe to whip up and take with you to any party. BACON DOUBLE CHEESEBURGER DIP
1/2 lb. of ground beef (I choose not to eat red meat, so I have substituted for ground turkey or Morning Star Veggie Crumbles)
6 strips bacon, cut into 1 in. pieces (again, turkey bacon or veggie works just fine)
1 small onion, diced
1 clove garlic, chopped
4 oz. Tofutti Better Than Cream Cheese, room temp
1/2 cup Tofutti Sour Supreme
1/4 cup mayonnaise
1/2 cup Go Veggie or Daiya mozzarella shreds
1/2 cup Go Veggie or Daiya cheddar shreds
1 tablespoon of your favorite g-free barbeque sauce
2 tablespoons ketchup
- Cook the ground beef in a pan over medium heat, set it aside and drain the grease from the pan.
- Cook the bacon in the pan until crispy, about 6-10 minutes, set aside and drain all but a tablespoon of the grease.
- Add the onion and saute until tender, about 5-7 minutes.
- Add the garlic and saute until fragrant, about a minute.
- Mix the ground beef, bacon, onions and garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, barbeque sauce and ketchup and pour it into a baking dish.
- Bake in a preheated 350F oven until the top starts turning a light golden brown and then sides are bubbling, about 20-30 minutes.
Oh Dear! I never thought getting ready for a new job would keep me so busy (and tired)! I clearly haven’t been keeping up with writing daily like I promised/wanted. But, if at first you don’t succeed try, try again, right? That being said, I sill plan on adhering to Motivation Monday. I think it is important that we all have something to start our week off on a positive note. After heavy reconstruction, my record player is up and running again and I can’t wait to start Vintage Vinyl Wednesday, as well. And, to get the recipe section of my blog a-go, Friday will be Gluten-Free Friday (dairy-free too!). I hope that this summer I can work on writing more substantial stuff, and more often. Right now, my busy schedule has gotten the best of me. But, have no fear! My blog will go on!
